Plant Boss Tacos

One of the hardest things about living in the bus is cooking! We are always looking for a meal that is easy to cook & tastes delicious (bonus points if its not too bad of a clean up). We were so excited when we ordered Plant Boss from Co-Op Market for the first time. We had no idea what to expect and now they are our FAVORITE tacos!


Here's what you'll need:


Plant Boss Package (mild or southwestern flavor is our favorite)

Red Pepper

Corn Tortillas (hard or soft)

Lettuce

Nutritional Yeast

Avocado

Sriracha (optional)


Step 1: add water to the Plant Boss meal and let it soak up for 3 minutes


Step 2: while step one is going on, cut up your red pepper


Step 3: put some oil in your pan and wait for it to warm up a little on medium heat


Step 4: add in your Plant Boss (Plant Boss subsitutes one lb of ground meat - don't let it not being meat throw you off though. It is better than any meat products we have ever had!)


Step 5: once the water is about halfway gone in the pan add in your peppers


(if you purchased the soft corn tortillas, now would be a good time to put some oil on a pan and prepare to harden those bad boys up)


Step 6: prepare the tacos! put a layer of lettuce & avocado! add in the Plant Boss & peppers


Step 7: put on your toppings! We like to add Nutritional Yeast because it tastes like cheese without the tummy ache! Sriracha is optional especially if you have the southwestern Plant Boss - your mouth may be on fire haha


And dive in! It is that easy! It is our new favorite meal!
